How Long Does Sushi Rice Last in the Fridge?

Were you planning to make sushi and something came up, now you need to store everything overnight? Not to worry, Sushi rice can last in the fridge from 3 to 5 days as long as you’ve placed the rice in an air tight container.

If the container isn’t air tight, it’s okay, it’s just that your rice will get harder over time, and so when you warm up your sushi ingredients, you’ll need to add a little water to the rice.

Can You Store Sushi Rice in the Fridge Overnight?

Yes, as I mentioned above, it’s fine to keep sushi rice in the fridge for a few days. But even in an airtight container, the rice will slowly begin to go bad, or even ferment. This makes it not worthy of being used. After all, sushi is meant to be served fresh with subtle flavors, so anything that adds to the flavor is really going to stand out.

What is Sushi Rice?

Sushi rice is simply regular rice that has had a few ingredients added to make it more flavorful for sushi. Usually to make sushi rice you add salt, sugar, and vinegar to the rice all mixed well. Generally, it is recommended to eat your rice and or sushi as soon as the ingredients are all prepared, but of course sometimes that just isn’t possible.

Here a question arises; how long you can store sushi in the fridge?

When the sushi prepares with the raw fish, then you can store it for 24 hours in the fridge. Hence you will observe the change in the texture and taste but it will be consumable. And it will soften the texture of your wraps, regardless if you’re using seaweed paper, soy paper. But if you consume it within 24 hours after preparing the sushi, then it will not cause any harmful effect on health. 

If you think about how you can keep it for a longer time without any change in its texture then here I can say that you can store it in a sealed and airtight container that will prevent loss of moisture.

Here I can say that, when you store cooked sushi without any seasoning, then you can keep it in the refrigerator for 3-5 days in a sealed container. When I prepare cooked sushi rice with brown and white rice, I prefer to cool it at room temperature then subject it to refrigeration.

So that I can enjoy rice sushi after 3-5 days with good characteristics. While I think it is best to consume it after 2 days so that I can enjoy its fresh taste. As I used fresh ingredients and microwave then I can enjoy its fresh flavor after 2 days.

Concurrently, I can store rice sushi for 6 hours at the ambient temperate before eating. If I keep rice in the refrigerator immediately, it will give a gummy texture that why I have to be aware of its storage for the maximum period. That’s why when I prepared sushi then I usually try to make a roll.

Collectively, the answer to this question is the period of storing sushi is depend on the characteristics of the roll and how you will store it. Depending on the conditions it can be stored from 24 hours to weeks. The characteristics of sushi depend upon its type. You can store vegetables and cooked fish sushi up to the weeks at 5 °C and for 5 days at 7 °C 

Tips for storing sushi in the fridge to enhance its shelf life:

Usually, I recommended eating it within 24 hours after the preparation of sushi so that it will not cause food poisoning. Hence you can store it immediately within 30 minutes after its preparation so that you can enjoy its freshness.

For an even better result, you can store it in the fridge by warping it in plastic wrap. To prevent the dryness of the roll during freezing, you can wrap the vinegar rice sushi roll in a wet cloth. Hence, in my opinion, homemade sushi can easily be stored for a longer period as compared to the commercial roll.

Simultaneously, I recommended to you that not store the container of roll along with the containers of other food in the fridge. Because it will change the flavor of the product. Collectively, I am not recommended to store your roll in the freezer because you thaw the roll before consuming it will modify its texture and promote microbes growth. Moreover, it will enhance dryness and cause a hardened texture of roll.


The storage and impact of freezing depend upon the types of sushi. If you prepare raw fish sushi, then you can store it for 24 hours. Similarly, when you prepared sushi with cooked fish, then it can be stored for 3 days. However, if you store it for a longer period then it will remove moisture and it becomes unsafe for consumption.

But don’t try to freeze sushi rolls because you’ll end up with a soggy and not so tasty mess at the end. They just don’t freeze well.

 If you store rice roll, it will be dried and because hardness of surface while veggie roll can be store for a longer time in refrigeration.
